Sarah says “Cooking to me is like putting my personality onto a plate. Everything about me is in my cooking.”

Mark says “She loves food, she’s always keen to learn, she always brings new ideas to the kitchen.”

Sarah is working with Mark, chopping vegetables and cooking

Sarah says “If I see something on TV or on the internet or anything like that, I just jot it all down and then come back to work and try and put my own little twist with it. When I serve my food I think of how I’d want to see it and how I’d want to taste it if I was a customer. So I always push myself to the most that I can so that I can produce the best thing.”

Mark says “Sarah’s got to be one of our top apprentices, because she’s just shown enthusiasm all the way through her course.”

Sarah says “With the apprenticeship you learn more of the whole scheme of things, rather than just one little thing. You learn everything.”

Sarah is cooking coating and cooking scallops

Mark says “She’s been an outstanding contribution to our kitchen, and to any kitchen she’ll be an outstanding contribution I think.”

We see Sarah plating up the final finished dish.

Sarah says “Everyday I’m one step closer to owning my own restaurant. That gives me my passion, that gives me my self-confidence, that gives me everything.”
